From Mistletoe at Moonglow
Ginger Crackle Cookies Recipe by Kim McMahan Davis, from Cinnamon and Sugar and a Little Bit of Murder

Ingredients:

2 1/4 (10 ounce) cups flour
3 teaspoons ground ginger
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
8 tablespoons (4 ounces) unsalted butter at room temperature
1/4 cup (2 ounces) vegetable shortening
1 cup (8 ounces) granulated sugar, plus 2/3 cup for rolling
1 large egg
1/4 cup (2 fluid ounces) molasses
1/2 to 3/4 cup crystallized ginger pieces, finely chopped

Directions:

Position oven rack to the middle.  Preheat oven to 350 degrees.  Line cookie sheets with parchment or Silpat.

In large bowl, combine flour, ginger, baking soda, cinnamon, cloves and salt.  Whisk until well blended. 

In another large bowl, combine butter, shortening and 1 cup sugar.  Beat with mixer on medium-high speed until well combined. Add egg and molasses and beat until well blended.  Pour in the dry ingredients and mix on low speed until well blended.  Add crystallized ginger and blend in.

Pour remaining 2/3 cup sugar into shallow bowl.  Using a small scoop, make 1-inch balls with dough.  Roll each ball in sugar and set 2 inches apart on cookie sheets.  (If dough seems too soft to work with, place in refrigerator for a couple of hours.)

Bake one sheet at a time until puffed and slightly browned around the edges, about 10 - 13 minutes.  Let cool on sheet for 5 minutes then place cookies on wire rack to cool completely.

To make ahead:
The dough can be made, shaped and rolled in sugar through step 3, then frozen for up to 2 months before baking.  For best results, position the shaped dough snugly on a small cookie sheet and freeze until very firm.  Then pile the frozen balls into a heavy-duty freezer bag and store in the freezer.  When you’re ready to bake, remove only the number of cookies you need, place them on the prepared cookie sheet and leave them on the counter while the oven heats up. Bake as directed.

Cooking with pride thanks to Ozeri's gorgeous scales !

I have been wanting to start sharing our cooking and recipes for a while now as my youngest son is really into baking at the moment.  When I received my brand new scales from I knew there was no better time and I wanted to show them off to you all.
The scales I chose were the Ozeri Epicurean Digital Kitchen Scale, purely down to how stylish they looked. When they arrived they looked even better, extremely good quality, modern design with a beautiful mirror effect on them and I completely love them.


Switch them on and you are greeted with a 'hi on the large display', a simple touch chooses between grams, ounces, kilograms and pounds. What I love best of all is when you need to weigh items such as flour or sugar I simply put a plastic bowl on the surface, touched the on button again and the weight went back to zero so I could measure the items without worrying about the weight of the bowl.  When I finished cooking it was a simple wipe and straight back in the cupboard. I did ponder on displaying them on my worktop as they do look so nice, the trouble is I have so much on them already, maybe it's time I had a rethink.  Apparently the glass weighing area is shatterproof but forgive me for not testing this as I couldn't take the chance on spoiling such a gorgeous item.  Highly recommend for treating yourself, go to Amazon.co.uk here to take a look.


So we decided to start off with a simple recipe for Chocolate Chip Cookies, yum !!

Recipe - Chocolate Chip Cookies

Ingredients Needed:

75g margarine (3oz)
75g brown sugar (3oz)
1 egg
few drops of vanilla essence
150g self-raising flour (6oz)
pinch of salt
100g plain chocolate chopped (4oz) or
100g chocolate chips (4oz)

Method:
  1. Cream the margarine and sugar.
  2. Beat in the egg and essence.
  3. Stir in the flour, salt and chocolate.
  4. Place in small spoonfuls on greased baking trays. 
  5. Bake in a moderate oven, 180oC, 350oF, Gas Mark 4 for around 10-15 minutes.

Tips:

Using the chocolate chips are much easier.  Also if you have a family of good eaters, like me, then you will need to double the recipe !  We also substituted chocolate chip with white chocolate chip for our second batch.

Very easy to make and tastes gorgeous, although you will notice that my son doesn't believe in small spoonfuls when baking cookies :-)

Ryan and I were watching Guy's Big Bite last week and we saw this recipe for Savory Meat Rolls but it's not gluten free. We decided to come up with a version that is and I think we did a pretty good job. Enjoy!

2 pkgs Chebe All Purpose Bread Mix, prepare dough according to package directions
1 roll breakfast sausage
1/2 onion, chopped
1/2 green pepper, chopped
1 clove garlic, crushed
3/4 8 oz pkg cream cheese, softened
1/2 C Parmesan
1 C grated mozzarella

Copy-Cat Olive Garden’s Tuscan Garlic Chicken Recipe

An absolutely goregous sounding recipe from my blogging friend Sidetracked Mom


I honestly can’t remember where I first found this recipe – I’ve been making it for years now. This is another meal that goes perfectly with the Parmesan Garlic Bread, too! Just in case you needed another excuse to make that bread again! :)

Olive Garden’s Tuscan Garlic Chicken

Ingredients
4 each (4 oz) boneless, skinless chicken breasts
1 1/2 cups flour, plus 1 tablespoon
1 Tbsp salt
2 tsp black pepper
2 tsp Italian seasoning
1 lb fettuccine pasta, cooked according to package directions
2 Tbsp olive oil plus extra for cooking the chicken (just enough to coat the bottom of your skillet)
1 Tbsp garlic, chopped
1 red pepper, julienne cut
1/2 cup white wine
1/2 lb whole leaf spinach, stemmed
2 cups heavy cream
1 cups Parmesan cheese, grated
